Chocolate Brownies with Cookie Crumb Topping Recipe

Selefina Cacao Powder and NibsI do a lot of baking for my family. There’s after-school snacks, snacks for scout meetings, softball practice, baseball and church bake sales. Every week I bake 3-4 different things for all of these activities. One thing that I make almost weekly is homemade chocolate brownies. I make them from scratch using a recipe from my grandmother. They’re easy-to-make!

Before we get to the recipe I want to introduce you to Selefina, the spice shop through Adagio Teas. It has a wonderful fine powdery consistency to it and the taste is fantastic! I’ve used it in one of my cupcake recipes to make the cupcakes and frosting…and in this chocolate brownies recipe hat I’m sharing below.

Chocolate Brownies with Cookie Crumbing Topping Recipe

8 Tbsp. Selefina Cacao Powder
1/3 cup vegetable oil
2 cups granulated sugar
3 large eggs
1 tsp. vanilla extract
1 1/4 cup all-purpose flour
1 tsp. baking powder
1 tsp. salt
(optional) 10 chocolate sandwich cookie wafers crushed
Non-Stick Baking Spray

In a large mixing bowl cream together the large eggs, granulated sugar, vanilla extract and vegetable oil until creamy. In another mixing bowl sift together the all-purpose flour, baking  powder, salt and Selfina Cacao Powder. Pour the dry ingredients into the wet ingredients. Use an electric mixer to mix all of the ingredients together.

Spray a glass baking pan with non-stick baking spray. Preheat oven to 350 degrees F.

Spread the brownie batter into the glass baking dish. Toss the chocolate cookie wafers into a blender and blend until fine crumbs. Set aside the crumbs.

Bake the brownies in a 350 degrees F oven for 20-25 minutes or until amost done. Remove. Sprinkle all of the cookie crumbs across the top. Place back into the oven and bake for 3-5 minutes. Remove and let cool. Once cool cut into squares. Store in an airtight container.
