3-Ingredient Indoor S'mores

I have a massive cookbook collection and to be honest with you…this is my new go-to book for baking! What’s really nice is that my 10 1/2 year old granddaughter loves to bake (she wants to be a professional cake baker & decorator when she grows up) and these recipes are easy enough for me to do with her. Yay! Great bonding time over baking!

The holiday season is approaching and The 3-Ingredient Baking Book would make a great holiday gift. Not only should you pick up a few copies for gift-giving, but you need to have a copy for yourself sitting on your shelf. You’ll grab for this book over and over again.

Just Peachy Cookbook by Belinda Smith-SullivanIf “Just Peachy” sounds familiar to you, you’re likely a loyal reader of The Classy Chics, since we’ve featured this book twice this year, one review and one recipe excerpt. Today I’m very happy to be back once again not only to talk about Just Peachy by Belinda Smith-Sullivan (Gibbs Smith, May 2019), but also with a giveaway for one lucky reader to win a copy of their own—or to give to the peach-lover on their gift list!

Just Peachy Cookbook by Belinda Smith-Sullivan

As I said in my original review, this lovely cookbook is brimming with recipes I want to make, information I can use, personal stories that bring the food to life, and photographs that make my mouth water. The author, Belinda Smith-Sullivan (also known as Chef Belinda), has put together a collection of recipes that all feature peaches, in both classic and imaginative new ways. Beyond the recipes, Chef Belinda also provides what amounts to a peach primer, including history, varietals, peach festivals throughout the United States and Canada, and a canning and freezing guide. She even gives guidelines for substituting canned or frozen peaches when fresh peaches aren’t in season, so these luscious recipes can be enjoyed year-round.

My original review of Just Peachy featured the Cast Iron Peach Cornbread I made from the book, and let me tell you, it’s one of the best cornbreads I’ve ever made! Actually, every Just Peachy recipe I’ve tried has turned out great, but my favorite is probably the Peach-Walnut Loaf Cake. It works equally well with fresh or canned peaches, and it’s a very nice breakfast treat or dessert. This loaf is simple to put together, making it perfect for everyday baking, although it’s good enough for company.

Here are some other peachy-licious recipes from Just Peachy:

• Peach-Pecan Breakfast Muffins
• Peach Guacamole
• Peach-Pistachio Chicken Salad
• Greek-Style Beef Stew with Peaches
• Country Peach Tart
• Peach-Coconut Cake
• Peach Barbecue Sauce
• Sparkling Peach-Blueberry Lemonade

If you’re starting to think about your holiday gift list, do consider Just Peachy for your favorite foodie. Not only is it an outstanding cookbook, but it’s also quite beautiful, with gorgeous photography by Mark Boughton. I swear, I can almost smell the peaches when I flip through this book!

Chef Belinda has a blog that’s called The Flying Foodie, because she’s a pilot as well as a chef. She also has a website http://chefbelindaspices.com where her own line of specialty spice mixtures is available for sale. Best of all, both sites feature more of her wonderful recipes.

The publisher, Gibbs Smith, is celebrating its 50th anniversary this year. In addition to cookbooks, they publish books on a wide variety of topics, including crafts, design, pop culture, the outdoors, and much more, including children’s books. Visit Gibbs Smith on Facebook, too. Just Peachy is available for purchase from Amazon.
