Just Peachy Cookbook by Belinda Smith-Sullivan

As I said in my original review, this lovely cookbook is brimming with recipes I want to make, information I can use, personal stories that bring the food to life, and photographs that make my mouth water. The author, Belinda Smith-Sullivan (also known as Chef Belinda), has put together a collection of recipes that all feature peaches, in both classic and imaginative new ways. Beyond the recipes, Chef Belinda also provides what amounts to a peach primer, including history, varietals, peach festivals throughout the United States and Canada, and a canning and freezing guide. She even gives guidelines for substituting canned or frozen peaches when fresh peaches aren’t in season, so these luscious recipes can be enjoyed year-round.

My original review of Just Peachy featured the Cast Iron Peach Cornbread I made from the book, and let me tell you, it’s one of the best cornbreads I’ve ever made! Actually, every Just Peachy recipe I’ve tried has turned out great, but my favorite is probably the Peach-Walnut Loaf Cake. It works equally well with fresh or canned peaches, and it’s a very nice breakfast treat or dessert. This loaf is simple to put together, making it perfect for everyday baking, although it’s good enough for company.

Chef Belinda has a blog that’s called The Flying Foodie, because she’s a pilot as well as a chef. She also has a website http://chefbelindaspices.com where her own line of specialty spice mixtures is available for sale. Best of all, both sites feature more of her wonderful recipes.

The publisher, Gibbs Smith, is celebrating its 50th anniversary this year.
