Easy Gingerbread Cookies Recipe with Baking Tips

I’m 72 years old and done with lugging out all of the baking tools to make holiday cookies completely by scratch. At my age…I’m looking for quick and easier ways to get my holiday baking done. That’s where Pillsbury refrigerated cookie dough comes in!

Last weekend at the grocery store I picked up 2 pkgs. of the Pillsbury Sugar Cookie Refrigerated Cookie Dough just so I could make their easy Gingerbread Cookies Recipe that you’ll find on their website. The recipe only requires 7 ingredients…saving you a lot of time and mess! Highly recommend that you try it.

Easy Gingerbread Cookies Recipe with Baking Tips

Here’s a few personal tips that I wanted to share:

1. I like to cut out my cookies on a tempered glass cutting board lightly dusted with flour. I can then toss it into the dishwasher for easy clean-up.

2. Don’t skimp on the refrigerated time for the cookie dough. They will cut-out better (with ease) once the dough has fully chilled!

3. Line your baking sheet with a non-stick silicone baking mat. You’ll get even baking and browning with your cookies without the bottoms getting too dark. Plus, no need to grease the sheet! They’ll slide off when done.

4. When freezing these type’s of cookies I recommend freezing them undecorated. Then thaw and decorate at a later time. You want to properly store them in airtight freezer containers for up to 3 months.

5. Use a kitchen timer when placing your baking sheets into the oven. For the first sheet I set the timer 2 minutes less than what the recipe calls for. Then check on the cookies. Take them out or reset the timer for the additional 2 minutes. All ovens are different, so time can vary! You can easily figure out how long it will take with the first sheet that goes in and out of the oven.

6. Don’t keep opening and shutting the oven door! You’re letting heat escape every time which requires additional baking time.

7. If you find that the dough is sticking to your cookie cutters you can lightly spray them with non-stick baking spray.

  2. Thanks for this super easy and tasty looking recipe. I have never been successful at making a good-looking gingerbread cookie from scratch so gave up. I am going to try again with this recipe.
