Jamaican Jerk Seasoned Pork Chops

Cooking and baking aren’t at the top of my list of favorite things to do. However, I do enjoy grilling and will grill foods as often as I can. Originally I had planned on tossing the pork chops onto the grill, but Tropical Storm Ophelia had other plans. That storm dumped heavy rain on us for 4 days straight. High winds, heavy rain, flooding, and power outages.  Onto my back-up plan…baking the pork chops in the oven. I apologize for the not-so-great photo…the power went out 5 minutes after I removed them from the oven.

Before I get to the recipe I want to introduce you to Selefina, the spice shop through Adagio Teas. Selefina sells your classic spices like parsley and oregano…along with chili powder, crystallized ginger root, Cacao nibs, and everything in between. You can purchase samples sizes, regular sizes, refills, and empty spice jars if you need those! High quality, fresh spices and seasonings shipped straight to your door.

For this recipe I used the Selefina Jamican Jerk Seasoning Kingston Blend. If you’re tired of the same old, same old pork chops or chicken…you need to give this seasoning blend a try. It’s a combination of Allspice, thyme, brown sugar, garlic, onion, paprika, cayenne pepper, black pepper, cinnamon, nutmeg and parsley. All perfectly blended together. Not spicy but very flavorful.
