How to Freeze Fresh Brussel SproutsLast month my local farmer’s market ran a buy 1 get 2 free special on fresh Brussel Sprouts. My husband and I love brussels so I purchased 2 and got 4 free. After we got home we got busy cleaning and blanching them to get them ready for the freezer. Here’s how you can easily freeze fresh Brussel Sprouts for later use. They will keep for up to 1 year in the freezer.

The first thing you want to do is place them into a colander and rinse them under cold water for several minutes. Pick out any debris. Fill a large bowl with cool water. Add in 3 teaspoons of table salt. Stir it around. Wait 2-4 minutes for it to dissolve. Add the Brussel Sprouts. I cover the bowl with a clean cotton towel. Let them sit in the salt water for 30 minutes. This helps to kill any bugs or fungus.

After the salt water soak you want to place them back into the colander. Rinse for 3-4 minutes under cool running water.

Get out your cutting board. You need to remove any yellow or wilted outer leaves from the sprouts. Trim a small portion off of the stem. Place into a bowl. Continue this process until you have all of the sprouts done.

Fill up a large pot with hot water. Place it onto the stove. Bring the water to a boil. Place them into the water and boil for 3-4 minutes depending on their size. The ones I were blanching were LARGE in size…so I blanched for 4 minutes. Turn off the heat. Carefully pour them out of the hot water and into the colander. Immediately run cold water over them to stop the cooking process. Turn off the water once they’re cool. Let the water drain off for 10-15 minutes.

Lay them on a flat baking sheet in a single layer with none of them touching one another. Place the sheet into the freezer for an hour. Remove. You can now pack them into freezer bags or freezer containers. Since it’s just the 2 of us living in our household I freeze them in 2 cup portions in freezer bags. Purge out all of the air, zip close. Make sure you label and date the bags. That’s it…done!

When you’re ready to use them…you can boil or steam them straight from the freezer. We like to boil them in water, butter, a little bit of granulated sugar and a tad of salt. Cook for about 6-8 minutes in boiling water in the homemade butter sauce. Delicious!!!

    I have never ate or fixed brussel sprouts. BUT it is always interesting to see how to do stuff. I noticed that you didn’t use parchment paper on the tray. Any time i don’t use it stuff stick to my sheet pan.
