Eggnog Frosting Recipe for Homemade Cupcakes

Eggnog Frosting RecipeEggnog frosting is great to use on top of your favorite holiday cookies, cakes, and cupcakes. Last weekend we used my mother’s Eggnog Frosting recipe to top cupcakes. We used a yellow cake mix, but you can certainly make your’s from scratch.

Eggnog Frosting Recipe

1/4 cup butter, softened
2 Tbsp. eggnog
2 1/2 cups confectioners’ sugar
1 Tbsp. milk
ground cinnamon

In a small saucepan melt the butter over low heat. Stir in the eggnog. Simmer over low heat 1 minute. Remove.

Add the confectioners’ sugar to a medium size mixing bowl. Pour in the butter and eggnog mixture. Use an electric hand mixer to beat. Halfway through add the tablespoon of milk. Continue beating until it’s creamy and smooth. If it gets too thick you can add a tad more of milk. It typically takes 3-4 minutes of beating time to get it at the right consistency for spreading.

Spread on cooled cupcakes, cookies, or cake. Depending on how many cupcakes you make or the cake size, you may need to double the recipe. I once made a triple layer cake so I had to triple up the frosting recipe to get enough. Once frosted, sprinkle on a little bit of ground cinnamon.
