Pumpkin Triple Chocolate Chip Cookies

I was at the grocery store 2 weeks ago buying some of my fall and holiday baking supplies. On the shelf I spotted a bag of Triple Chocolate Chips. Each bag contains a mixture of milk, dark, and white chocolate chips. I tossed two bags into my cart so that I would have them on hand for holiday baking.

Hubby loves chocolate chip pumpkin cookies, so I used a bag one bag in a batch of cookies. Oh my gosh, they turned out fabulous! Perfect blend of sweetness! They’re perfect as a snack, for a fall bake sale or enjoy a few with your morning coffee. Okay, I admit, I like them with my hot cocoa! Yeah, total chocolate addict is me!

Pumpkin Triple Chocolate Chip Cookies

Selefina Pumpkin Pie Spice Blend

For this recipe I used the Selefina Pumpkin Pie Spice Blend. I LOVE this blend because it replaces several spices typically called for in pumpkin muffins, breads, and pies. The Selefina Pumpkin Pie Spice Blend contains ground cinnamon, ground ginger root, ground nutmeg, ground allspice berries, ground cloves, and ground mace.

Pumpkin Triple Chocolate Chip Cookies

4 1/2 cups all purpose flour
2 cups granulated sugar
1  1/2 tsp. Selefina Pumpkin Pie Spice Blend
2 tsp. baking soda
1 tsp. salt
1 – 16 oz. can pureed pumpkin
1 cup vegetable oil
2 large eggs
2 tbsp. milk
1 tsp. vanilla extract
2 cups triple chocolate chips (or 1 small bag)

Preheat oven to 350 degrees F. Lightly spray baking sheet with non-stick baking spray or line with a silicone baking mat. Set aside.

Mix together all of the dry ingredients in a large bowl. Add the pureed pumpkin, vegetable oil, milk and vanilla extract. Beat with an electric mixer until well mixed together. Stir in by hand the semi-sweet chocolate chips until they’re mixed through the entire cookie batter.

Drop by the tablespoonful onto your prepared cookie sheet. Bake in a preheated 350 degrees F oven for 10-12 minutes or until done. Remove and let cool on a wire rack. Once cookies are cool, store them in an airtight container.

    I have never seen the bag of Triple chocolate chips. I shall definitely look for it in my grocery stores. This recipe sounds delicious.

  4. I haven’t seen the triple chocolate chips in the store, but I like the idea. That seasoning blend would be yummy in so many things.
