Quick and Easy Weeknight Dinner – Chicken Bow-Tie Soup

Weeknights can be super busy in our household. My husband works long hours and then after work we try to help with the grandkids. There are times that I have 30 minutes or less to get a hot dinner onto the table. Sure, I could toss a pizza into the oven or pull out a pre-packaged meal…but sometimes I want something homemade.

When I’m super busy I hit my pantry for a jar of homemade chicken soup. I’m a home canner and will can 24 to 36 quarts a year. The chicken soup can be heated up right out of the jar and eaten (great if your tummy sick) or add your favorite pasta, rice, or corn. All of them make a filling soup at dinner time.

Chicken Bow-Tie Soup

You can find my homemade CANNING CHICKEN SOUP RECIPE on the blog. Not a home canner? Don’t worry, you can use store bought chicken broth. I recommend the kind that comes in a carton and one that has reduced sodium.

To make Chicken Bow-Tie Soup you need your broth. I use my own canned chicken soup which contains cooked chicken, chicken broth, diced onions and carrots. To that I add about a quart of water. Boil up 2 cups of uncooked bow-tie pasta until they’re almost done. Drain water. Pour pasta into your soup base. Heat over medium heat for 10 minutes. Serve immediately.

Using my home canned soup base can get a hot dinner on our table in less than 30 minutes and it’s something we all eat.

    I like making chicken soup (not a canner) and using pasta it is so filling. I like to freeze individual bags to just pull out and into the microwave

  3. There is nothing better than homemade soup. I am not a canner, but I do make chicken and turkey broth that I will freeze for use in soups. This chicken soup looks hearty and yummy.

    That is such a great idea. I keep broth here for that reason. I do not can and that is my closest thing to it.

    I love using soup that I have frozen for a later time as a base for a more complicated soup of stew. It makes dinner much easier to put together.
