We love cheese and I’m always buying it from two local sources, the farmer’s market or the cheese shop in the city. When buying it you want to take three things into consideration:
1. Appearance
2. Aroma
3. Texture
When it comes to appearance you want to avoid any that show signs of spoilage, mold, sogginess or dryness cracks. Look at all sides of the block or wedge before purchasing it.
If you’re purchasing from a deli style counter ask them to let you smell it. They can cut off a small piece. If it has a foul odor avoid it. If you’re purchase pre-packaged cheese you’ll want to carefully open up the package once home and smell it. If it’s no good, return it in the original packaging immediately.
The texture should look uniform and even. You shouldn’t see dryness cracks, wet spots or a super-shiny surface. Avoid purchasing if it’s dry, cracked or discolored around the edges.
Always read the label when purchasing pre-packaged cheese! Look at the ingredients and expiration date. Make sure the package is tightly sealed and wasn’t previously opened and put back on the shelf. Know what you’re buying before you buy it.
