Grandma's Classic Meatloaf RecipeWhen it comes to comfort food one of the first things to come to mind is a good homemade meatloaf. It’s a classic dinner in our household and one that I make once a month. My family loves it served alongside mashed potatoes and buttered corn. In the summertime I’ll make it and serve it with corn-on-the-cob or freshly picked buttered lima beans from our garden.

Here’s a few variations you can try on the classic recipe: If you don’t have seasoned bread crumbs you can crush up saltine crackers, plain potato chips or torilla chips to equal the same amount of the seasoned bread crumbs. If you like meatloaf a little more on the spicier side you can add-in 1/2 teaspoon of chili powder, 1/4 tsp. red pepper flakes and some minced garlic to suit your own taste buds.

Grandma’s Classic Meatloaf Recipe

2 lb. lean ground beef
2 medium eggs, lightly beaten
1 medium onion, finely chopped
2 Tbsp. Worcestershire sauce, plus one teaspoon
1 1/2 tsp. Dry Mustard Powder
1/2 tsp. freshly ground pepper
1 cup seasoned bread crumbs
1/4 cup beef broth
1 Tbsp. olive oil
1/4 cup ketchup

Preheat oven to 350 degrees.

In a large bowl, combine beef, eggs, onion, 2 tablespoons Worcestershire sauce, Dry Mustard Powder, pepper and bread crumbs. Mix well until all ingredients are incorporated. With well-washed hands add beef broth to mixture and knead until fully blended. Oil the inside of the loaf pan and add meat mixture, patting until evenly distributed. In a small bowl, mix ketchup and 1 teaspoon Worcestershire sauce. Spread on top of meatloaf. Bake for 45-55 minutes

If desired: You can squirt additional ketchup across the top of each loaf during the last 5-8 minutes of baking time.

    This is pretty close to my own Grandma’s recipe, although using beef broth is new to me. I’ll have to give that a try.
