Blueberry and Pomegranate Power Bars Recipe

I’m 69 years old and always on the go. I keep busy by helping out my adult children, adult grandchildren and young great-grandchildren. I’m also very active with local senior groups and volunteer with my church. I seem to be running 8 hours a day and need grab-n-go snacks to keep me going.

One recipe that I’ve been enjoying the past 2 months is this easy-to-make Blueberry & Pomegranate Power Bars courtesy of Popcorn.org. I like to make a batch of them up ahead of time and then wrap each bar on its own. I keep them wrapped in a large storage container and then I can grab-n-go when I need one.

They’re also fun to pack in children’s lunch boxes or to take into the office to keep in your desk drawer or locker. A lot better alternative to grabbing something out of a vending machine at work. The recipe will make approximately 12 bars.

Blueberry and Pomegranate Power Bars Recipe

8 cups popped popcorn
1 1/2 cups old-fashioned rolled oats
1 cup dried blueberries
1/2 cup pomegranate seeds
1/2 cup whole natural almonds, toasted and coarsely chopped
2/3 cup honey
2/3 cup light brown sugar
2 tablespoons butter or margarine
6 ounces bittersweet chocolate, melted

Line 13×9-inch pan with foil; spray with cooking spray. Combine popcorn, oats, blueberries, pomegranate seeds and almonds in large bowl. Combine honey, brown sugar and butter in small saucepan; cook over low heat to boiling; boil 2 minutes. Pour over popcorn mixture and mix thoroughly.

Using damp hands, press mixture firmly into prepared pan. Refrigerate until firm, about 2 hours. Cut into 12 bars. Dip bottoms of bars into melted chocolate. Place on wax paper lined pan; refrigerate until ready to serve. Store in tight covered container in refrigerator.

    I love this combination of popcorn with oats, almonds and fruit . I love dipping the bars in bittersweet chocolate to make them even better.

  4. I like how this has popcorn n it! I have to admit never knowing what to do with a pomegranate besides drinking the juice. I enjoy the taste of them though. These would be terrific I think around the holiday especially when it seems we are all a bit over stuffed!
