When I think of homemade pineapple bread I think of our trip to Hawaii. You wouldn’t believe all of the foods in Hawaii that contain pineapple as an ingredient! Luckily for me, I love pineapples and this bread is absolutely delicious!

Pineapple Sweet Bread Recipe
2 medium eggs
1/2 cup butter, melted
2 cup granulated sugar
1 cup crushed pineapple with juice
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
Preheat oven to 350 degrees F. Lightly grease your loaf baking pan, set aside.
In a large mixing bowl beat together the medium eggs, melted butter and granulated sugar until smooth and creamy. Stir in the crushed pineapples with juice and the vanilla extract until well-blended together.
In a separate mixing bowl sift together the all-purpose flour, baking powder, baking soda and salt.
Pour sifted flour mixture into the first bowl, stirring all ingredients together until well-combined. It may be a little lumpy due to the crushed pineapple bits.
Pour the batter into your prepared loaf pan. Place in a preheated 350 degree oven and bake for approximately 45 to 50 minutes or until the center of the bread is done. Remove and let cool on a wire rack. Once cool, place into an airtight container. Store in the refrigerator for best results.

I lobe pineapple. I like making breads like this and serving them with a flavored butter or spread.
This sounds so good. Pineapple is such an underused fruit. I really like it but, alas, I don’t buy it to use it like I would like to.
