Maple Cranberry Granola Pancakes Recipe

Nix the stereotypical flowers this Mother’s Day and delight mom with a homemade breakfast in bed! Not sure what to whip up? Pamper mom with a plate of Viki’s Granola’s Maple Cranberry Granola Pancakes and a nice glass of freshly made homemade fruit juice! As a mother, grandmother and great-grandmother, I know I would love to be served breakfast-in-bed! How about you?

Are you all ready for Mother’s Day? How do you like to celebrate? Got any fun Mother’s Day plans this year? The kids are taking me out for dinner this weekend, since one of them will be away on vacation during the Mother’s Day weekend, so I’m looking forward to a dinner date out!

Maple Cranberry Granola Pancakes Recipe

Maple Cranberry Granola Pancakes Recipe

1 cup flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
Pinch of salt
1 cup buttermilk
1 egg
3 tablespoons melted butter
1/4 cup Viki’s Cranberry Maple Granola
Maple syrup for topping

In a large mixing bowl, blend flour, sugar, baking powder, baking soda and salt. Using a whisk or hand held mixer, whisk in buttermilk and egg until well combined and smooth. Stir in the melted butter. Heat a non-stick pan or griddle over medium heat. Using a ¼ cup measure, pour pancake mix to cook. When pancake is golden brown, flip and cook other side. Keep warm in a 275° oven. To serve stack a few pancakes and top with maple syrup and Viki’s Cranberry Maple Granola.

  3. What a super variation on pancakes and one that I know my family would enjoy. The cranberry maple granola would give it such a nice flavor and some crunch.

  4. I had to laugh at the breakfast in bed comment. I’ve never had it nor would I like to since the thought of food in the morning makes me queasy. I do brunch though and a Mother’s Day brunch sounds fabulous. My mom likes to go out since as long as she doesn’t have to cook, it’s a treat!
