Coconut Flour Pancakes Recipe

With spring finally here, it’s time to focus on healthy eating habits to get your body in tip-top shape for summer. However, this doesn’t mean you have to nix your favorite pancakes! Instead, swap-in coconut flour for regular flour in all your favorite recipes to enjoy baked goods, without the guilt.

Coconut Flour Pancakes Recipe

4 eggs, beaten
1 cup cream (coconut cream for non-dairy substitute)
1 1/2 teaspoon vanilla extract
1/2 cup Carrington Farms Organic Coconut Flour
2 tablespoons coconut sugar
1 1/2 teaspoon baking soda
1/4 teaspoon salt
Carrington Farms Unflavored Liquid Coconut Cooking Oil for cooking

Mix eggs, cream and vanilla together. In a separate bowl, combine coconut flour, coconut sugar, baking soda and salt. Slowly fold wet mixture into dry mix. Heat griddle or frying pan to medium heat. Add Carrington Farms Coconut Cooking Oil. Pour 1/4 cup of batter into the pan. Cook for about 2 minutes on each side or until top starts to bubble around the edges. Top with bananas, maple syrup or any other topping and enjoy!

  1. I did not even know that there was such a thing as coconut flour. I do use coconut oil so not surprising. Finding alternatives that are low in carbs for those of us that like to bake and to eat yummy foods like pancakes is really nice. This would be a good recipe to try and the pancakes looks delicious.

    I have seen coconut flour but never used it. I dont bake a whole lot nowdays, but these sound quite good. It seems these are a nice alternative for thosethat cant tolerate white flour. I would probably like them.

    Although I have used coconut sugar and coconut oil I have never tried coconut flour. I think that this would be a delicious different version of a recipe for pancakes.

    As a diabetic, I like the idea of a low-carb alternative to flour. I’ve tried coconut oil in cooking & really liked it, so I’ll try coconut flour, too.
