Cranberry Maple Granola Cookies Recipe

Cranberry Maple Granola Cookies RecipeDuring the winter season, I make and bake a lot of different cookies. I think homemade cookies look so pretty when displayed in a beautiful cookie jar sitting out on your kitchen countertop or buffet. I know my grandchildren and great grandchildren love homemade cookies and I enjoy making them for them.

Today’s guest post recipe is courtesy of Viki’s Granola and they look delicious!

Cranberry Maple Granola Cookies Recipe

4 cups Viki’s Granola Maple Cranberry
1 3/4 sticks unsalted butter (room temperature)
1/2 cup light brown sugar
1/4 cup sugar
1 large egg
1/4 teaspoon salt
1 cup all-purpose flour

Preheat oven to 375 degrees F.

Line two baking sheets with parchment paper or silicone mats. Working with a stand up mixer fitted with a paddle attachment, beat the butter at medium speed until smooth, about 2 minutes. Add sugar and beat for another 3 minutes. Add the egg and salt and beat until well blended. Reduce mixer speed to low. Add the flour, mixing only until incorporated, then add the granola. Make sure to remove any bits of dry ingredients left at the bottom with a rubber spatula.

Scoop out rounded tablespoon of dough; arrange the mounds on baking sheets, leaving 1½ inches of space between them. Flatten the mounds lightly with your fingertips.

Bake 10 to 12 minutes. The cookies should be golden brown but not firm. Let them cool for 2 minutes before transferring to a wire rack.

  1. I’ve never tried making cookies with granola. I like the flavors in these.

  2. Cranberries and maple are such a great combo. I tried some cran-raisins the other day since I had a free coupon and they are good for snacking plain too. I’d throw them in some oatmeal with maple too but these cookies sound even better. They do look festive.

Currently I am eating my Viki’s Apple Cinnamon Granola. I have never tried the Maple Cranberry flavor, but it sounds good. I think I would use less sugar and perhaps add more cranberries to this recipe.
