We have been sharing all of the delicious wonders that Chia seeds can do for your health over the past few months. By adding Chia seed, either ground or whole seed, into your foods you are adding a healthy addition that will fill you up and add delicious fiber to your diet. It is so easy to use this produce by sprinkling some onto your cereal or your salad; adding some to smoothies, eggs, oatmeal, salad dressings; plus adding it to your baking is easy as well.
Today I want to share a tasty recipe that I made using Salba Chia. These cookies made a delicious treat that my whole family loved!
First make your Chia Gel which is 1 tbsp of chia seed mixed in 1/4 c water. This equals 1 egg. Then add all of your ingredients and blend your cookie dough.’
When your dough is blended, scoop and bake 13-15 min at 350 and enjoy! The complete recipe is below so you can get some holiday baking going on and add some Chia seed to your holiday baking treats.
- 3 cups flour
- 1 1/2 tsp course salt
- 1 1/4 tsp baking soda
- 3/4 cup unsalted butter
- 1/4 cup of Salba Chia Gel (1 tbsp chia seed in 1/4 c water)
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 2 large eggs, room temperature
- 1 tsp pure vanilla extract
- 2 cups (12oz bag) semi-sweet chocolate chips
- 1/2 cup pecans or walnuts – optional
- Preheat oven to 350
- Whisk flour, salt, baking soda in a medium bowl
- Place butter, Chia gel and both sugars into a mixing bowl. Hand mix with a spoon or mixer until light and fluffy.
- Add eggs, one at a time until blended completely then add Vanilla
- Slowly add your flour mixture and combine it with the wet ingredients. Add nuts at the end and mix.
- Scoop out equal amounts of dough and place on your cookies sheet
- Bake 13-15 minutes until golden brown and toothpick comes out clean
