Chocolate Peppermint Martini Cocktail Recipe

2 ounces Tina’s Vodka
2 ounces chocolate liqueur
2 ounces light cream or half & half
1 teaspoon of cocoa powder
1 candy cane

In a shaker, combine Tina’s vodka, chocolate liqueur, a splash of peppermint schnapps, and a touch of cream. Shake vigorously with ice until well chilled, then strain into a martini glass. Garnish with a sprinkle of crushed candy cane and a chocolate wafer.

Peanut Butter Cookies with Peanut Butter Chips Recipe

Peanut Butter cookies are a great base for all of those flavored chocolate morsels that you see out in the retail marketplace. I like to use this particular peanut butter cookies recipe and then add-in semi-sweet, dark chocolate, white chocolate, peanut butter chips, etc. into the batter. Last weekend I made the peanut butter cookies but stirred in a 1/2 cup of peanut butter chips. You can certainly add-in more! If chopped nuts are your thing…toss in some of those too!

Freezing Tips: These cookies freeze well. Bake and let them cool on a wire rack until room temperature. Then place into freezer bags or freezer containers. Label and freeze for up to 3 months. Thaw at room temperature.

Peanut Butter Cookies with Peanut Butter Chips Recipe

1/2 cup shortening
3/4 cup Creamy Peanut Butter
1/3 cup granulated sugar
1/3 cup brown sugar
1 medium egg
2 Tbsp. milk
1 tsp. vanilla extract
1 1/2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
additional granulated sugar
1/2 cup peanut butter chips
non-stick baking spray

Preheat oven to 350 degrees F. Lightly spray baking sheet with non-stick baking spray, set aside.

In a large mixing bowl cream together the shortening and creamy peanut butter. Beat in the granulated sugar and brown sugar until creamy. Blend in the egg, milk and vanilla extract until all ingredients are combined.

In a large mixing bowl sift together the all-purpose flour, baking soda and salt. Gradually add the flour mixture into the creamed mixture, beating after each addition until all ingredients are combined together.

Form the cookie dough into 1-inch diameter balls. Place each ball onto the baking sheet. Use the back of a large spoon to flatten each one. Then sprinkle a tad of granulated sugar on top.

Bake in a preheated 350 degree F oven for 8-12 minutes or until done. Remove from oven and transfer to a wire rack for cooling. Once cookies are cooled store them in an airtight container.
