Classic Homemade Vanilla Frosting Recipe

Classic Homemade Vanilla Frosting RecipeThis vanilla frosting recipe is really easy-to-make. You only need a handful of ingredients to make it. You can use it to frost cakes, cupcakes, brownies or sweet breads. When making the recipe I do have a few suggestions that I would like to make.

1. I like to use a Vanilla Extract Powder that I get from Selefina. The Vanilla Extract Powder is used the same way as liquid vanilla extract at a 1:1 ratio. I find that it makes all of my recipes taste better and it’s so easy to use!!! You can purchase it directly from Selefina. I highly recommend it.

2. ONLY use butter. I personally don’t like using margarine in this type of reciping. I feel the frosting sets-up better when I use butter. Plus, I prefer the taste of butter over margarine.

3. Use an electric hand mixer which helps you to get the proper consistency. Hand-mixing doesn’t really work well for this type of recipe.

Classic Homemade Vanilla Frosting Recipe

2 c. Confectioners’ powdered sugar
2 Tbsp. butter, softened
3/4 tsp. pure vanilla extract
2 Tbsp. milk

In a large mixing bowl beat together the Confectioners’ powdered sugar and the softened butter. Beat in the pure vanilla extract and the milk. I find it best to use an electric mixer set on the medium speed. Beat together until you reach the desired consistency. If should be soft and creamy, but spreadable.

If it seems to be too soft…add-in a little bit more confectioners’ sugar. If it seems to be too thick, add in a 1/2 Tbsp. of milk. Keep adjusting the confectioners’ sugar and milk until you get the right consistency.

Spread onto a cooled cake, cupcake, brownies, doughnuts, cookies, sweet breads, etc.

You’ll only need a few ingredients to make it. If you like a lot of spicy flavor…increase the Jamaican Jerk Seasoning Blend to suit your own taste.

Jamaican Jerk Pineapple Baked Chicken Recipe

1 lb. chicken (breasts, thighs, legs, whatever you prefer)
20 oz. can pineapple chunks with juice
1 tsp. Jamaican Jerk Seasoning Blend
pinch of salt
pinch of ground black pepper

Separate the pineapple chunks from the juice. I like to pour the juice into a glass measuring cup. Stir the 1 teaspoon of Jamaican Jerk Seasoning Blend into the pineapple juice. This will be your marinade.

Place the pieces of chicken into a marinade container. Pour the marinade over-the-top. Make sure you coat all sides of the chicken.

Use a fork or a masher to “mash down” the pineapple chunks. Toss those into the container too. Put a pinch of salt and ground black pepper on top. Place the lid on top. Refrigerate for at least one hour, during the daytime hours or overnight to allow the flavors to infuse.

Bake in a 375 degrees F oven for 35-45 minutes or until the chicken is done. You can toss it onto a hot preheated grill if you prefer that. It will take approximately 25-30 minutes if you’re grilling it. We don’t like to over-cook chicken which makes it tough and dry. We like it juicy. With that said, make sure the chicken is done.

Serve it with your favorite sides.
