My Thoughts: As you all know…I love to cook and bake! Along with my love for being in the kitchen comes my love to collect various cookbooks. At this time I have over 250 in my collection! Hubby and I love Panini’s but for the past few months we have been stuck in the same-old, same-old rut. We were itching for some new Panini recipes and this book definitely provided that to us!

I love that almost all of the recipes use ingredients that you most likely have on hand or ones that are readily available in just about every grocery store. You won’t have to search for miles looking for these ingredients. Next, I love that there are 48 pages of large color photographs that make your mouth water! Just browsing the photos makes you hungry for a home cooked Panini!

Last weekend we decided to try the Cheddar, Ham & Apple Panini recipe which is featured on page 147 in the cookbook. This recipe requires ciabatta rolls (or any rolls), butter, mango chutney, sliced baked ham, cheddar cheese and a granny smith apple. You then place your sandwiches in your grill and brown for 3 to 4 minutes or until done. They are super yummy! They can be served for lunch, dinner or as an appetizer.

There are a slew of tasty Panini recipes in this book and all of them are really easy to prepare. Over the coming weeks hubby and I will be going through the book and trying many more of them!

My Thoughts: I just got a pressure cooker 3 weeks ago as an anniversary present and haven’t had a chance to use it just yet. I have been reading on the internet various tips and hints on pressure cooking and I am looking forward to getting started with it.

One of the things I really love about this cookbook is that it’s great for beginners or for experience pressure cooker cooks. In the beginning of the book you will find a great educational section titled “The Essentials of Pressure Cooking” which is full of all kinds of great information for the beginner. I also love that the book has a table of cooking times which is really handy for me.

The chapters are broken down as: Appetizers, Soups, Meat, Poultry, Fish & Seafood, Vegetables & Vegetarian Dishes, Beans & Grains, Desserts and Stocks, Sauces & Condiments.

This is a comprehensive pressure cooking cookbook with 225 mouth-watering recipes. The author lays out the ingredients list and directions for you…along with some tips and hints along the way. I am really looking forward to starting my journey in pressure cooking once my hip is healed (just had surgery) and I can get up on my feet again.
