My mom spends several days a week at our home, so when she’s here, I have to be very careful on what I’m cooking and serving to her. One of the things I appreciate with this book is all of the educational information contained within it. Whether you’re newly diagnosed or have been diagnosed for years, you’ll learn something new.

Next, when mom is here…it’s just three adults and when she’s at her own home, well, then just one adult. It’s nice to finally have a cookbook that is for cooking smaller portions for just one or two people. I really appreciate that the authors speak in layman’s terms and almost all of the ingredients in the various recipes can be found at your local grocery store. You won’t have to run all over town searching for the correct items.

All of the foodie photography in this book is mouth-watering and will inspire you to get busy making the recipes. Finally, mom really likes that there are 150 recipes in the book along with a 14-day meal plan which helps her to plan out her meals.

Spiralizer Skinny: Lose Weight with Easy Low-Carb Spiralizer Recipes

It’s a new year and many people have vowed to eat healthier, get more exercise and to lose weight in 2017. However, many people who set up these goals and/or resolutions, don’t come up with an extensive game plan first, which sets them up for failure and disappointment later.

If you’re on a mission to lose weight and eat healthier, I highly suggest you check out this fantastic cookbook that I’m featuring on the blog today.

Spiralizer Skinny: Lose Weight with Easy Low-Carb Spiralizer Recipes

Synopsis: Start off the New Year by changing the way you think about dieting with Spiralizer Skinny: Lose Weight with Easy Low-Carb Spiralizer Recipes. The authors and founders of Tasteaholics.com, explore all of the weight-loss benefits and nutrition of going low-carb with over one hundred recipes.

Each recipe uses the spiralizing method to offer wholesome and easy-to-make meals, from lasagna rosettes to drunken parsnip noodles with steak. Using the freshest ingredients, these recipes will help you to lose weight without the hassle and disappointment that come with diet fads.

The book is nicely broken down in easy-to-read chapters which start off with: 1. A diet based on science, 2. Starting your low-carb diet and 3. An introduction to spiralizing and our recipes. After the first 3 chapters you move on to the recipes: Soups & Salads, Main Dishes and Sides.

Examples of Recipes:

Rosemary Chicken Parsnip Soup
Pork & Kale Stew
Egg Drop Soup
Steak & Almond Pesto Noodles
Strawberry Pecan Salad
Cucumber Mint Salad
Chicken Squash Alfredo
Chicken & Broccoli Bake
Pork Stir-Fry
Asian Beef Slaw
Steak Ramen
Beef Lo Mein
Spicy Cashew Beef
Creamy Apple Slaw
Lemon Ginger Scallops
+ Many More!

What is spiralizing? A spiralizer simply transform a few basic vegetables (and fruits) into noodles. This is a great way to add more healthy fruits & veggies to your diet, while cutting down the calories. The book explains all of this to you in a way that anyone can understand and how you can incorporate all of this into your daily diet.

We grow our own veggies and some fruits in our backyard garden (from May through October) and once gardening season arrives, I’ll be trying out many of these recipes with our fresh fruits & veggies. Right now, those things are hard to come by here locally, heck…my local grocery store had NO fresh peaches, pears, nectarines, zucchini or squash last week which irritates me. I would pay MORE to have fresh stuff brought in. Sigh.
