Chocolate Corn Flakes No Bake Cereal Snack Mix Recipe

During the warmer months of the year I like to make no-bake cookies and snack mixes for my family to enjoy. Let’s face it, when it’s 90 degrees outside…the last thing that I want to do is heat up my kitchen by using the oven. This Chocolate Corn Flakes No Bake Cereal Snack Mix is a twist on the classic no-bake oatmeal cookies recipe that most people are familiar with. Except it uses Corn Flakes cereal instead of oatmeal and we toss in mini dehydrated marshmallow bits (the type you use for hot cocoa).

The entire recipe is made on the stove top in one large pan! Once it’s done you’ll turn it out onto a piece of aluminum foil to set up. Less than 10 minutes of cooking time and about 1 hour of set-up time is all that it takes!

Chocolate Corn Flakes No Bake Cereal Snack Mix Recipe

2 cups Corn Flakes Cereal
1 cup granulated sugar
1/4 cup butter
1/4 cup milk
1/4 cup cocoa powder
1/3 cup creamy peanut butter
1/2 teaspoon pure vanilla extract
1/4 teaspoon salt
1/2 cup mini dehydrated marshmallow bits (the type that’s used in hot cocoa)

In a large saucepan melt the butter over medium heat. Add in the milk, granulated sugar, cocoa powder, vanilla extract, and salt. Bring mixture to a rolling boil. Once boiling time the boil for exactly 1 minute, stirring constantly to prevent scorching. Turn off the heat and remove the pain from the burner.

Stir in the creamy peanut butter until melted. Fold in the Corn Flakes Cereal. Stir with a rubber spatula until cereal is completely coated in the mixture. Toss in a 1/2 cup of mini marshmallows (see note above) using a rubber spatula stir them into the mixture.

Lay out a sheet of aluminum foil or wax paper. Use the rubber spatula to spread the snack mix onto the aluminum foil. Let sit on your countertop for about 1 hour to allow it to set up. Once set…break it up and place it into an airtight container.

How to enjoy: My grandchildren get a little bit at a time in a little dessert bowl with a spoon. Because of the chocolate it can be messy when eating with fingers so I do recommend using a spoon or have wet wipes near by.

Last week I posted about my favorite nail polish remover made by Cutex. You can read that post to learn more about the product and why I use it. Today’s post is about my favorite clear top coat made by Sally Hansen. I’ve been using it for years and it’s a must-have in my beauty bag.

The Sally Hansen Insta-Dri Anti-Chip Clear Top Coat can be used over-the-top of any other nail polish brand that you may be using. I use all kinds of different brands when painting my nails from the expensive “high-end” brands to the inexpensive ones you find in discount stores. If I like the color…I buy it!

When it comes to using a clear top coat I want one that prevents chipping, gives me longer wear and it has to dry fast. Let’s face it, we all lead busy lives these days and no one wants to sit around for an hour waiting for their nails to dry!!! You only need to apply 1 coat and within 30 seconds your nails are dry! Yes…it’s true! Not only that, my nails stay looking shiny and nice for 7-10 days when I use this clear top coat.

Now…I do admit. If I know I’m going to be hard on my nails in the coming week I do apply 2 coats of the clear top coat for added protection. Gardening, yard work, crafting, etc. can be hard on your nails. If I’m going to be going on vacation and traveling…I use 2 coats too. I want my nails looking gorgeous until we return. Just an added little tip to use 2 coats if you know you’re going to need the extra coverage that week.

So there you have it. Shelly’s favorite clear top coat that I use ever week when I paint my nails and that includes my fingers and toes! If you don’t want to sit around waiting for your nails to dry…this is the clear top coat that you need!
