Love pancakes but looking for something a little different? If so, I think you will really like this potato pancake recipe! I don’t make potato pancakes often but when I do, my family goes crazy for them! This recipe will make about 15 small pancakes and about 9 or 10 large ones so it’s a great recipe for those of you who have larger families or for those of you who pre-make your breakfasts and freeze them for later use.
Homemade Potato Pancakes Recipe
1/4 cup milk
2 medium eggs
3 cups raw potatoes, diced very small
1/2 of a small onion, finely diced
3 tbsp. flour
1 tsp. salt
1/4 tsp. black pepper
1/2 tsp. baking powder
Put all of the above ingredients into a large blender container and process on medium or high speed until well combined and blended together. Heat up your griddle with some melted butter or non-stick cooking spray. Once it is hot pour some of your pacake batter onto the griddle. Fry until both sides are lightly golden brown. Serve with your favorite pancake toppings.
