Delicious and Easy to Make Lasagna Soup

My family enjoys eating lasagna but it can be a pain in the butt to make. Let’s face it, as a busy mom….I don’t have hours to spend in the kitchen making a meal. When my family is hungry for lasagna I’ve been making this EASY TO MAKE and delicious Lasagna Soup recipe. It’s completely made on the stove-top. If you want to save time…you can brown up the ground beef, onions, pepper and garlic the night before. Let cool and refrigerate overnight or until you’re ready to make dinner.

Easy to Make Lasagna Soup Recipe

1 lb. lean ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 large banana pepper, finely chopped (or a green bell pepper)
24 oz. jar Spaghetti Pasta Sauce
8 cups chicken broth
14 oz. can stewed tomatoes
1 tsp. balsamic vinegar
2 tsp. granulated sugar
2 tsp. basil flakes
2 tsp. parsley flakes
2 tsp. oregano flakes
2 tsp. Italian Seasoning Blend
1 tsp. salt
1/2 to 1 tsp. ground black pepper
10-12 uncooked lasgna noodles, broken into 2″ pieces

Toppings:

Shredded Cheese: You can use whatever you have on hand. Parmesan, cheddar, mozzarella, etc. I like using a 6 cheese italian blend that I purchase at the grocery store. 
Ricotta Cheese – Optional

In a large skillet brown up the lean ground beef with the finely chopped onion, minced garlic and chopped banana pepper until the meat is throughly cooked. Drain away the grease. 

While the ground beef is simmering…pour the chicken broth into a stock pot. Bring it to a boil. Add-in the broken-up Lasagna Noodles. Boil for about 5 minutes or until the noodles look par-cooked. Turn the heat down to medium.

Stir in the ground beef mixture, can of stewed tomatoes and the jar of pasta sauce. Next, add in all of the spices listed above. You can vary those “spice amounts” to suit your own taste buds. Stir really well to get everything combined. Simmer on medium to medium-high heat for 10-15 minutes or until the noodles are fully cooked and the sauce is steaming hot. Turn off the heat.

Spoon the Lasagna into soup bowls. You can top it with any type of shredded cheese you have on hand and/or with ricotta cheese. Whatever your family likes. Serve immediately.

You can store leftovers in the refrigerator (once cooled) for 3-4 days.
