My family enjoys homemade muffins several times a month. I prefer to make homemade vs. purchasing them from a bakery or coffee shop. I think homemade tastes better and they certainly cost a lot less! They’re perfect to go along with your morning coffee or tea….or enjoy one as a mid-day snack.

Mom’s Blueberry Muffins Recipe
1 cup milk
1 large egg
1/3 cup vegetable oil
2 cups all-purpose flour
2 tsp. baking powder
1/2 cup granulated sugar
1/2 tsp. salt
1/2 cup fresh blueberries
Preheat oven to 350 degrees F.
Spray a muffin pan with non-stick baking spray or line the cavities with paper muffin liners. Set aside.
In a large mixing bowl mix together the milk, egg and vegetable oil. In another bowl sift together the all-purpose flour, baking powder, granulated sugar and salt. Add the flour mixture into the first bowl…mixing until all of the ingredients are combined.
Stir in (using a large spoon) the fresh blueberries until they’re distributed throughout the batter.
Spoon the batter into the muffin cups filling them 3/4 of the way full.
Bake in a preheated 350 degrees F. oven for 17-20 minutes or until the muffins are done. The tops will be lightly golden and the centers will be done when a toothpick comes out clean after being poked. Remove the pan from the oven and let them cool.
Store muffins in an airtight container.
