Chicken and Rice Stove Top Dinner Recipe

During weeknights, I don’t have 1-2 hours to spend in the kitchen making a meal. During the busy work week I try to make easy recipes that take less than 40 minutes to make from start to finish. Since it’s just my husband and I, we don’t need a full course meal to fill our bellies.

For this recipe, you’ll need just a few basic ingredients. If you’re really pressed for time…you can use pre-cooked, cubed chicken that was already prepared. For this recipe I used a pouch of Knorr’s Chicken Flavored Rice. If you like a lot of flavor you could toss in some finely chopped onion or minced garlic as recipe variations. Season with salt and ground black pepper if desired. If you’re cooking for more than 2 people…I would suggest doubling-up the recipe ingredients.

Chicken and Rice Stove Top Dinner Recipe

2 Boneless, Skinless Chicken Breasts
1 Pouch of Seasoned Chicken Flavored Rice (like Lipton’s or Knorr’s)
1 small pack of frozen green peas
1-2 tsp. sour cream

Toss the boneless, skinless chicken breasts into a pan of boiling water. Cook for 5-8 minutes or until the chicken is cooked through. Remove from the pain and let cool for a few minutes. Once cool, chop up the cooked chicken into pieces.

Follow the directions on a pouch of Seasoned Chicken Flavored Rice and cook it in a large saucepan until it’s almost done. During the last 4 minutes of the cooking process…add-in the cooked chicken and the green peas. Cook for until everything is done…should only take a few minutes. Remove from heat. Stir in 1-2 teaspoons of sour cream which adds flavor and creaminess. Serve and enjoy.

If there are any leftovers, you’ll want to refrigerator them in a container. This recipe doesn’t freeze well.
