You won’t need any food coloring!!! The strawberry puree will give you the pink coloring and natural flavoring. If you’re making a big batch of cupcakes…you can easily double-up this recipe. For the best flavor….use pure vanilla extract, not immitation!
Homemade Strawberry Frosting Recipe
1 cup unsalted butter, softened
4 cups confectioners’ sugar
1/4 cup fresh strawberry puree
1 Tbsp. milk
1 tsp. pure vanilla extract
Place softened butter and confectioners’ sugar in a mixing bowl. Beat until creamy. Beat in the strawberry puree, milk and pure vanilla extract. If you need the frosting a little thicker…add more confectioners’ sugar. If you need it more spreadable, add a little bit of milk….adjust those two ingredients to get your consistency right. When making it…I use an electric hand mixer which gives me better control at getting the consistency exactly right. Spread onto the top of the cupcakes immediately.
