Potatoes…we eat them several times a week. We enjoy them as a side dish, appetizer or as a snack. These cheesy bacon topped potato slices are baked in the oven. You can use whatever variety of cheese that you have on hand. These remind me of cheesy, bacon topped French Fries but in my honest opinion, they’re better! Kids and adults love them and they’re super easy to make!

Baked Cheesy Bacon Topped Potato Slices
4-5 large white potatoes, washed and sliced
3 Tbsp. butter, melted
1 tsp. Pink Himalayan Sea Salt
2 cups cheddar cheese, shredded
small amount of finely chopped onions
6 slices of bacon, cooked and crumbled
non-stick baking spray or a silicone non-stick baking sheet
Preheat oven to 375 degrees F. Spray a baking sheet with non-stick baking spray or line it with a silicone non-stick baking mat.
Slice the potatoes into rounds. Melt the butter in a small dish. Dip the potato rounds into the butter. You only need a tad of butter on each side. Place the potato round onto the baking sheet. Sprinkle a tad of Pink Himalayan Sea Salt and finely chopped onions on top.
Place the baking sheet into the preheated oven and bake for 10-12 minutes. Remove from the oven. Use a spatula to flip the slices over to the other side. Sprinkle the shredded cheese and crumbled bacon on top. Place the baking sheet back into the oven for an additional 8-12 minutes or until the slices are soft and tender. Remove from the oven. Serve immediately.
If you have any leftovers, let them cool. Store in an airtight container in the refrigerator. You can reheat them up the next day using the microwave oven.
