Creamy Cheesy Cauliflower Side Dish Recipe

Cauliflower is one of those vegetables that my family enjoys eating. When I use cauliflower it’s typically used in an easy side dish like this particular recipe. You’ll only need a few basic ingredients to make it. You can use fresh or frozen cauliflower florets. You can use whatever cheese you have on hand. See my notes at the bottom of the recipe for additional ideas.

Creamy Cheesy Cauliflower Side Dish Recipe

1 medium bag frozen cauliflower florets
water
3 cups milk
1/4 cup butter
1/2 to 1 tsp. salt
1/2 to 3/4 tsp. ground black pepper
1/2 to 3/4 tsp. Italian seasoning blend
1-2 Tbsp. all-purpose flour
1/4-1/2 cup shredded cheese

Place the frozen cauliflower florets into a large saucepan. Add enough water to fully cover them. Boil the florets just until they’re fork-tender. Drain out all of the water. 

Pour in the milk, add in the butter and sprinkle with the salt, ground black pepper and Italian Seasoning Blend. Turn the burner heat onto medium or medium-high. You want it to be at a simmer, not a full rolling boil. Simmer for 5-6 minutes. Stir in the all-purpose flour to thicken-up the creamy sauce. I start out with 1 tablespoon of flour first. If needed, I’ll add the second. Simmer for an additional 2-3 minutes. Sprinkle-in the shredded cheese, stirring until everything is well combined. Remove from heat. Serve immediately.

Notes: You can use whatever type of cheese you have on hand. I’ve used American, Cheddar, Sharp Cheddar, Colby Jack, Parmesan and even Mexican Blended cheese. You’ll want to refrigerate all leftovers. This side dish doesn’t freeze well. Don’t have any Italian Seasoning Blend on hand? You can season it with parsley, basil, sea salt or whatever type of seasonings that you prefer. A little bit of minced garlic added into it really adds a unique flavor.
