Banana muffins…I admit, they’re my favorite flavor when it comes to homemade muffins. They’re super easy-to-make and a great way to use up over-ripe bananas that I have sitting around. When I make them…I will often use a classic recipe. Sometimes I make them plain while other times I’ll toss in chocolate chips, peanut butter chips or I’ll smash-up a few peanut butter cups and incorporate those into my batter. This recipe will make 10-12 muffins

Classic Moist Banana Muffins Recipe
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 large ripe bananas, mashed
3/4 cup granulated sugar
1 medium or large egg
1/3 cup unsalted butter, melted
Preheat the oven to 350 degrees F. Line a muffin pan with paper wrappers or spray the cavities with non-stick baking spray. Set aside.
In a large mixing bowl sift together the all-purpose flour, baking powder, baking soda and the salt. In a separate bowl beat together the mashed bananas, granulated sugar, egg and melted butter until creamy. Fold the flour mixture into the wet ingredients bowl until everything is well-combined together.
Fill the muffin cups 2/3 of the way full. Place the pan into a 350 degree F preheated oven and bake for 18-24 minutes or until the center of the muffin is done. Remove. Place them on a wire rack to finish cooling. Store in an airtight container.
