Last month we were without a stove and oven for 4 days while we waited for our new range to arrive. Over the course of those 4 days I had to cook and bake using our toaster oven and microwave. Don’t get me wrong, I use them but they’re NOT the main ways we cook and reheat food in our home. I had to adapt some of our favorite recipes so that I could get food into our small toaster oven.

Homemade Apple Crisp Made in a Toaster Oven Recipe
We needed something for dessert one evening so I baked an apple crisp in our toaster oven. I used a stoneware loaf pan which is naturally non-stick.
You’ll need to peel, core and chop 5 large apples. Place them into the loaf pan along with a splash of lemon juice. Stir. Place 2 tablespoons of butter into a glass measuring cup. Melt in the microwave for 10-13 seconds. Pour the melted butter over the apples in the loaf pan.
In a small mixing bowl combine together 2 tabelspoons brown sugar, 1/2 to 3/4 teaspoon ground cinnamon, 1-2 tablespoons of melted butter and 1 1/2 cups of rolled oats (oatmeal). This will be the topping. If needed you may need to add a little bit more melted butter to get a nice crumbly-type of topping. Spread the topping over-the-top of the apple mixture.

Preheat the toaster oven to 350 degrees F. Bake for 12-16 minutes or until the apples are fork tender and the crumb topping has turned a light golden brown. Remove. Let it sit for 10 minutes. You can serve it warm with vanilla ice cream, with a scoop of frozen whipped topping, all by itself or refrigerate it to serve cold.
Notes: I personally found that 5 large apples were plenty enough to fill the loaf pan to the depth that I needed. You can use eating, baking or a mixture of both type’s of apples. If you’re worried about “sticking” lightly spray your baking dish or loaf pan with a little bit of non-stick baking spray.
