Easy Mini Strawberry Cheesecakes Using Instant Pudding Mix

My granddaughter takes culinary classes at school. She came home one day with a take-out box full of yummy miniature strawberry cheesecakes that they made at school that day. I was pleasantly surprised at delicious they were! Here’s how the girls in her culinary class made them.

If you need to cut calories or the sugar content…use the sugar-free version of the cheesecake flavored instant pudding mix.

Mini Strawberry Cheesecakes Recipe

1 box cheesecake flavored instant pudding mix
Ingredients to make the pudding (found on the box, typically just milk)
1 small box graham cracker crumbs
1 can or jar of strawberry pie filling
disposable clear plastic cups

Place about a 1/4″ to a 1/2″ of graham cracker crumbs into the bottom of each cup. 

In a mixing bowl….mix together the cheesecake flavored instant pudding mix with milk using a wire wisk or electric mixer. Mix it until the powder is thoroughly dissolved and so that no clumbs remain. Use a large spoon to spoon the pudding mixture into the plastic cups on top of the graham cracker crumbs. You want to fill the cups about 1/2 way full. Spoon the strawberry pie filling on top.

Cover the cups and place them into the refrigerator for 3-4 hours or until the pudding has firmed up. Serve cold. 

Optional: Some of the girls added frozen wipped topping on top of the strawberries. Totally optional if you want to do that.
