Zatarain’s One Pot Jambalaya Recipe Made with Ground Beef
Looking for a quick weeknight dinner recipe? Something that you can get onto the table in less than 45 minutes? If so, check out Zatarain’s One Pot Jambalaya. You can purchase the long grain rice mix with vegetables and spices at most grocery stores across America. All you need to do is add meat, olive oil and water. If you want to add additional veggies, that’s up to you!!!

On the package they recommend that you add one meat item: Smoked Sausage, Cooked Chicken, Ham or Shrimp. However, my family loves it made with lean ground beef. To save time…I brown up the 1 lb. of lean ground beef the night before. Drain away the grease. Let it cool and then refrigerate until dinner time the next day.
Cooking Instructions – You mix 2 1/2 cups of water, the rice mix, your choice of meat and 1 tbsp. of vegetable or olive oil. I use olive oil as my personal choice. Cook it all up in a 3 quart saucepan. Bring it to a boil, reduce heat and simmer on low for 25 minutes or until the rice is tender. Remove from heat and let it sit for 5 minutes before serving.
In addition to using the lean ground beef….I toss in a large can of kidney beans. I drain the liquid out of the can, rinse the beans under cold water and then toss them into the saucepan so that they’re cooking with the other ingredients. It makes for a much heartier meal.
On the package are additional suggestions: adding 1 medium tomato (chopped), 1 can of diced tomatoes, 1 cup of cooked corn or 1 cup of broccoli florets.
What I love about buying the Zatarain’s One Pot Jambalaya is that I can use that as a base and add things to it that my family enjoys eating. During those busy weeknights, I’m always looking for quick and easy dinner recipes.
