Mom's Easy Chocolate Nut Fudge RecipeHomemade fudge. I just love it! A lot of people are intimidated when it comes to making it. Don’t be! If you follow a recipe exactly…it should turn out just fine! This recipe is one that I’ve used for years. It’s simple to make and you can use any type of chopped nuts that you have on hand. I’ve made it using chopped walnuts, pecans, almonds, macadamia and with peanuts.

When making the recipe you want to prep the baking dish first (see step one below). Don’t use a smaller or larger pan. The recipe is specifically for an 8″ by 8″ baking dish. I like using glass or ceramic baking dishes, not metal ones. I find that the fudge sets-up better. You can use semi-sweet, dark chocolate, white chocolate or a combination of two of them when making the recipe just as long as it equals 1 full cup.

The recipe calls for 1 tsp. vanilla extract. I personally use and highly recommend the Selefina Vanilla Extract Powder. You use it the same way that you use liquid vanilla…a 1:1 ratio. The powder is so easy-to-use and honestly…it tastes a LOT better than it’s liquid counterpart. HIGHLY recommend it. You can purchase it directly from Selefina.

Mom’s Easy Chocolate Nut Fudge Recipe

1/2 cup butter, softened
1 cup semisweet chocolate chips
1 tsp. pure vanilla extract
2 cups granulated sugar
5 ounces evaporated milk
10 large marshmallows
1 cup peanuts or walnuts, chopped

This recipe is for an 8″ by 8″ square baking dish. Lightly butter the bottom and sides of the dish. Set aside.

In a medium mixing bowl combine together the softened butter, chocolate chips and vanilla extract. Set aside.

Using a medium saucepan over medium heat…combine together the granulated sugar, evaporated milk and marshmallows, stirring constantly. Reduce the heat to the low setting and simmer for 5 additional minutes, stirring constantly. I like using a rubber or silicone spatula to stir the fudge. Remove from heat.

Pour the melted marshmallow mixture over the ingredients sitting in the mixing bowl. Beat the mixture using an electric mixer on the low speed setting or by hand until it thickens. It only takes a minute or two. Fold-in the chopped nuts until distributed throughout the batter. Pour into the prepared baking dish. Let sit at room temperature for 5 minutes. Cover. Refrigerate for 2-3 hours or until firm. Once firm, you can cut it into squares. Store the squares in an airtight container.
