Classic Sweet Potato Pie Recipe

Classic Sweet Potato Pie RecipeDuring the holiday season I like to make a few sweet potato pies. If you’ve never had one before…they taste a lot like pumpkin pie but a tad sweeter. At least that’s my opinion. They’re easy-to-make and you serve them just like you would a pumpkin pie. If you’re not a fan of pumpkin…try sweet potato! This recipe will make 1 pie. You can easily double-up the ingredients if you need to make two.

Classic Sweet Potato Pie Recipe

9″ unbaked pie crust shell
2 cups cooked and mashed sweet potatoes
2 medium eggs
1 1/4 cups evaporated milk
1/4 cup granulated sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 tablespoons rum
2 Tablespoons butter, melted

Preheat oven to 375 degrees F.

In a large mixing bowl combine together all of the above ingredients (except for the pie crust shell) and blend until smooth. I like to place everything into my stand mixer and have it mix everything for me. Easy!

Pour the creamy mixture into the unbaked pie shell. Place the pie into a preheated 375 degree F oven and bake for 10 minutes. Reduce the oven temperature to 350 degrees F. and bake for an additional 30-35 minutes or until the filling is firm. Right before the pie is done I like to sprinkle a little bit of ground cinnamon on the top. Place back into the oven for the remaining 6-7 minutes. The center will be done when a toothpick comes out clean. Remove from the oven and let cool on a wire rack.

Once the pie has completely cooled you want to cover it and store it in the refrigerator until serving time.
