When it comes to eating various foods and dishes from around the world…Mexican cuisine is one of my favorites! I’m not talking about the type of food you get in a fast-food drive-thru. Nope, I’m talking about good authentic Mexican cuisine you make at home or get from a good restaurant that makes & serves it.

One of the reasons I enjoy Mexican cuisine is because it’s so flavorful. You can find mild, moderate and spicy dishes. Something for everyone on the “heat scale”. I also find that a lot of the dishes are easy for me to make at home…from scratch and I can find all of the ingredients at my local grocery store. I don’t need to order and have things shipped to me!
Like a lot of people…I enjoy various burritos made with chicken or steak. I love fajitas made with chicken, steak or pork. I could seriously eat a beef or fish taco every week! Quesadillas are so versatile and easy-to-make! Add your favorite meat, cheeses and veggies…and done! My wife really enjoys eating taco salads and Tostadas made with meat, beans, vegetables and various cheeses.
When it comes to snacking…hand me a bowl of nachos any time along with a big bowl of homemade guacamole or peach mango salsa. Heck…sometimes I’ll eat that as a meal. Again, so super easy to make at home!
