I like to keep a few cans of white breast meat chicken in my pantry for when I need to put together a quick lunch or dinner. One way that I like to use canned chicken is in a classic chicken salad recipe. It whips up in only a few minutes and tastes delicious.
Classic Canned Chicken Salad Recipe
12.5 oz. can of White Chicken Breast
1/3 cup Reduced Fat Mayonnaise
1 Tbsp. Onion, finely chopped
1/2 to 1 Stalk Celery, finely chopped
1 tsp. Lemon Juice
1/2 Tomato, Chopped
Dash of Salt
Dash of Ground Black Pepper
1//4 tsp. Dried Parsley Flakes
Drain the water from the canned chicken. Place chicken in a bowl and flake it apart using a fork. Add the remaining ingredients except for the chopped tomato. Stir until everything is blended together. Gently stir in the chopped tomatoes.
You can serve the chicken salad on your favorite rolls or bread. If you want to turn it into a hot sandwich aka a melt…you can use it as the filling for a Chicken Melt Sandwich too!
