Cheesy Zucchini Casserole Recipe with White Sauce

Every year we plant one zucchini plant in our backyard garden and every year we get at least 10 large zucchini from that one plant! I like to use the zucchini to make various side dishes, appetizers, and homemade breads. Today’s recipe is easy-to-make and makes a great side dish or lunch! Unlike other casseroles, this one utilizes a homemade cheesy white sauce.

Cheesy Zucchini Casserole Recipe with White Sauce

4 cups of Zucchini (peeled, seeded, and cubed)
1 cup Reduced-Fat Mayonnaise
1 Tbsp. Sour Cream
1/2 cup Cheddar Cheese, Shredded
1/2 cup Mozzarella Cheese, Shredded
2 Medium Eggs, Slightly Beaten
1/2 tsp. Salt
1/2 tsp. Ground Black Pepper
1 Tbsp.  Selefina Parsley Flakes
1/4 cup Seasoned Bread Crumbs
2 Tbsp. Butter, melted

Peel the zucchini and remove the seeds while cutting it into cubes. I like using 1 to 1 1/2″ sized cubes. Measure out 4 cups. Filled a pot with water and bring it to a boil. Place the cubes into the boiling water and boil for 5 minutes. Remove from heat. Pour cubes into a colander with cold running water running over them to stop the cooking process. Set aside.

In a mixing bowl combine together the Reduced-Fat Mayonnaise, Sour Cream, Cheddar Cheese, Mozzarella Cheese, Eggs, Salt, Ground Black Pepper, Selefina Parsley Flakes, Bread Crumbs and Butter. Stir in the par-boiled Zucchini cubes until everything is combined.

Lightly grease a casserole dish with butter. Preheat the oven to 350 degrees F.

Bake for 20-30 minutes at 350 degrees. During the last 5-8 minutes of the baking process you can sprinkle on additional bread crumbs if desired. Remove from the oven and let sit for 5 minutes before serving.
