Roasted Marinated Mango Chicken Recipe

Back in June of 2023 I published a review on the Selefina Mango Juice Powder. Please check out that post to learn more about the product. It’s one of my favorite products from Selefina! Anyway, I decided to get a little creative with it by mixing it with a few additional ingredients to turn it into a delicious chicken marinade.

Roasted Marinated Mango Chicken Recipe

Roasted Marinated Mango Chicken Recipe

1/4 cup sour cream
2-3 Tbsp. mayonnaise
2 Tbsp. milk
1 Tbsp. butter, melted
1 tsp. Selefina Dried Parsley Flakes
1-2 tsp. Selefina Mango Juice Powder
1/2 tsp. salt
1/2 tsp. ground black pepper
3-4 chicken thighs or breasts

I mixed all of the above ingredients together in a large 2-cup glass measuring cup using a spoon. If it seems a little thick add a little bit more sour cream. You want the consistency to be creamy but not overly thick. Place the marinade into a dish along with 3-4 pieces of chicken thighs or breasts. Make sure they get coated on all sides. Cover. Place into the refrigerator for 4 hours or overnight to marinade.

Preheat the oven to 350 degrees F. Pour the chicken and marinade into a baking dish. Bake in a preheated oven for 40-50 minutes or until the chicken is done. Remove and let sit for 5-10 minutes before serving. It’s delicious!!!
