When it comes to baking I would rather make grab-n-go cupcakes as compared to a cake. I find that it keeps portions under control and my grandchildren enjoy cupcakes more than cake! Here’s an easy recipe to make home chocolate frosting for cupcakes. It’s my favorite frosting recipe to use. You should have enough frosting to cover 18 regular size cupcakes.
Easy Chocolate Frosting Recipe for Cupcakes
4 squares (4 ounce) unsweetened chocolate
13 oz. can sweetened condensed milk
1 tablespoon water
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
Melt the chocolate squares over hot water in a double boiler pan, stir in the sweetened condensed canned milk and cook over low-medium heat for 5 minutes, stirring often with a rubber spatula. The mixture is done once it has thickened up. Stir in the water, vanilla extract and almond extract and simmer on low for 1 additional minute. Remove from heat and let cool for 4-5 minutes.
Once the frosting has cooled down spread it over the top of your cooled cupcakes. I typically don’t get fancy about it and will using a regular spatular or butter knife. If I’m using them for a special occasion or party then I will get fancy with how I apply it. Place them in an airtight container for storage.
