Homemade Blueberry Waffles Recipe

During the weekends I try to make my family a nice hot breakfast with my kids typically voting for homemade waffles. They love blueberry, strawberry, mixed berry, and banana waffles. They would eat them every day if I let them. The good thing about making them from scratch is that you can freeze them for later use. They’re great warmed up in a microwave (wrapped in a paper towel) or lightly toasted.

Homemade Blueberry Waffles Recipe

When freezing them I like to layer a piece of parchment paper between each waffle in the freezer bag. I can typically pack 12 waffles into a gallon size zipper closure bag. Lay it flat in your freezer to keep them from getting squashed. Use them like any other frozen waffle that you buy at the grocery store.

Homemade Blueberry Waffles Recipe

1 3/4 cups all-purpose flour
1 tbsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 cups milk
1/3 cup vegetable oil
2 large eggs
1/4-1/3 cup fresh blueberries (sliced in half if they’re large)

Preheat your waffle iron until it’s hot and ready to go. I like to lightly spray mine with non-sticky spray.

In a large mixing bowl sift together the all-purpose flour, baking powder, baking soda and salt until combined. In a separate mixing bowl mix together the milk, vegetable oil and large eggs. Pour the wet mixture into the dry mixture until everything is well-combined. Use a large mixing spoon and fold-in the fresh blueberries until they’re distributed throughout the batter.

Pour waffle batter onto your hot griddle (waffle iron), close and heat until it’s golden brown. Remove and serve immediately with your favorite toppings.
