Chocolate Chip and Strawberry Waffles Recipe with Freezing Tips

I make a batch of homemade waffles for my family every 2-3 weeks. They’re easy to make and my kids love them! They’ll eat them for breakfast or as an after-school snack. They can easily take them out of the freezer and pop them into the toaster. Top with butter, honey butter, creamy peanut butter, sliced fresh fruits, honey, maple syrup, nutella, or whipped topping. Homemade is a lot better than store bought!

Freezing Instructions: Make waffles using a waffle iron. Lay them on a platter to fully cool. Place them into a large freezer bag or container. I like to place a sheet of parchment paper between each waffle to keep them from sticking together. Use them just like any traditional frozen waffles you purchase at the grocery store.

1 3/4 cups all-purpose flour
1 tbsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 cups milk
1/3 cup vegetable oil
2 large eggs
1/4-1/3 cup fresh strawberries, sliced
1/4 cup mini chocolate chips
non-stick baking spray

Preheat your waffle iron until it’s hot and ready to go. I like to lightly spray mine with non-stick baking spray. I recommend that you lightly spray the waffle iron between each batch that you make.

In a large mixing bowl sift together the all-purpose flour, baking powder, baking soda and salt until combined. In a separate mixing bowl mix together the milk, vegetable oil and large eggs. Pour the wet mixture into the dry mixture until everything is well-combined. Use a large mixing spoon and fold-in the freshly sliced strawberries until they’re distributed throughout the batter…then fold-in the mini chocolate chips until they’re distributed throughout the waffle batter.

Pour the batter onto your hot griddle (waffle iron), close and heat until it’s golden brown. Remove and serve immediately with your favorite toppings (see topping suggestions above) or let them cool to freezer for later.

    Homemade waffles are the best. I think it is a good idea to use the mini chocolate chips instead of the bigger ones.
