Mom’s Creamy Cucumber Salad Recipe

Mom's Creamy Cucumber Salad RecipeMy mom makes the best cucumber salad. It’s creamy, refreshing, and full of flavor. Last weekend she gave me a few fresh cucumbers from her garden so I whipped up her creamy cucumber salad recipe. My family enjoys it as a healthy snack. It would be great to take to a family reunion or a potluck when you’re looking to take something different.

Mom’s Creamy Cucumber Salad Recipe

2 fresh large cucumbers
1/2 cup sour cream
1/4 cup reduced-fat mayonnaise
1 Tbsp. milk
3 Tbsp. granulated sugar
1 Tbsp. white vinegar
1/4 to 1/2 tsp. pickle juice
dash of salt
dash of ground black pepper
dash of celery seed
dash of dill (optional)

Peel cucumbers and slice into rounds. Then chop them up into bite-size pieces.

In a medium-sized bowl combine together the sour cream, mayonnaise, milk, granulated sugar, white vinegar, pickle juice, salt, ground black pepper, celery seed, and dash of dill (optional).  Stir all of the ingredients together until you get a nice dressing. Taste-test it. You can sweeten it up (add more granulated sugar) or make it a little more creamy by adding additional sour cream.

Place the cucumber pieces into the dressing and stir to coat. Cover the bowl and place into the refrigerator for 2-4 hours to allow the flavors to infuse. This is BEST when it has been well-chilled! It will keep for up to 4-5 days in the refrigerator but is best when eaten within 3 days.

    I would definitely add the dill. I wonder if I could use low fat sour cream without the dressing being too runny.
