Green Bean and Feta Salad Recipe

Nothing says summer like cooking up delicious and healthy meals for your friends and family. So we’re excited to share with you a no-fuss and easy-to-prepare recipe that is perfect for your next get-together by food strategist, cooking instructor, and Integrative Nutrition Health Coach Sherri Holzer of Simply Sherri. The recipe makes 4 servings.

Green Bean and Feta Salad Recipe

Green Bean and Feta Salad Recipe

2 Cup Green Beans (stems removed, chopped)
Sea Salt & Black Pepper (to taste)
1 Cup Cherry Tomatoes (cut in half)
1/2 Cup Red Onion (sliced)
1/2 Cup Feta Cheese (crumbled)
4 Tablespoons Extra Virgin Olive Oil
1 Lemon (juiced)
4 Tablespoons Fresh Dill (chopped)
1 Teaspoon Oregano

In a large pan, bring one inch of lightly salted water to a boil. Add the beans, cover, and cook for about three to four minutes or until tender-crisp. Transfer the beans to a bowl of iced water for two to three minutes.

Drain the beans and add them to a large bowl with salt, pepper, tomatoes, onion, feta, oil, lemon juice, dill, and oregano. Toss to combine.

Divide evenly between plates or into bowls.

    This would be a very nice salad to make anytime this summer. I like to have salads with vegetables sometimes and no leaves!
