No Bake Chocolate Chex Cereal Snack Mix Recipe

My grandchildren and great-grandchilden love these easy-to-make, no bake cereal snack mixes. Over the years I’ve made the recipe with a variety of different cereals. I buy what is on sale…sometimes the name brand or the generic. This time around I purchase Chex cereal which was on sale to make the recipe. You can use Corn Chex or Rice Chex.

Toss-in Variations: Sometimes I have chopped peanuts or M&Ms candies on hand. When I do, I don’t hesitate in tossing some into the mixture. My daughter has tossed dried cranberries, strawberries and broken up thin pretzels into hers from time to time too.

No Bake Chocolate Chex Cereal Snack Mix Recipe

2 cups Rice or Corn Chex Cereal
1 cup granulated sugar
1/4 cup butter or margarine
1/4 cup milk
1/4 cup cocoa powder
1/3 cup creamy peanut butter
1/2 teaspoon pure vanilla extract
1/4 teaspoon salt

In a large saucepan melt the butter over medium heat. Add in the milk, granulated sugar, cocoa powder, vanilla extract, and salt. Bring mixture to a rolling boil. Once boiling time the boil for exactly 1 minute, stirring constantly to prevent scorching. Remove pan from heat.

Stir in the peanut butter until melted. Fold in the Rice or Corn Chex Cereal. Stir with a rubber spatula until cereal is completely coated in the mixture.

Lay out a sheet of aluminum foil, a sheet of parchment paper or a silicone non-stick baking mat. Spoon the mixture out onto the sheet using a rubber spatula. You want an even layer going across the sheet. Allow to cool. The snack mix will firm-up once cooled. If you want to speed up this process, line a baking sheet with aluminum foil and then place everything into the refrigerator for an hour.

Once cool and firm…pour the snack mix into a large bowl or air-tight container. It will keep for up to a week.

    These easy snack recipes are always fun to make and eat. I would probably add more chocolate since i love chocolate!!
