Popcorn Easter Bunny Snack Bars Recipe

Popcorn Easter Bunny Snack Bars RecipeThese Popcorn Easter Bunny Snack Bars would be the perfect homemade treat to add to those Easter baskets this year. They’re easy to make and each batch of the recipe will yield approximately 16 bars. The recipe is courtesy of our friends at Popcorn.org.

Tips from me: If you don’t want to make them in bar shape you could try using metal cookie cutters and doing Easter Egg and Bunny shapes too! Instead of storing them in an airtight container wrap them in pastel colored plastic wrap, or buy food-safe snack bags that are imprinted with an Easter design. You can typically pick up the bags on Amazon or a party supply store.

Popcorn Easter Bunny Snack Bars Recipe

2 tbsp butter
3 1/2 cups miniature marshmallows, divided
1 tsp vanilla extract
8 cups popped popcorn
1 1/2 cups candy-coated miniature eggs
2 tbsp pastel-colored sprinkles

Melt butter in large saucepan set over medium-low heat; stir in 3 cups marshmallows, and vanilla until melted. Remove from heat. Immediately stir in popcorn until well coated.

Press into parchment paper–lined and greased 13- x 9-inch baking pan; smooth top with greased spatula. Immediately sprinkle with remaining marshmallows, miniature eggs and sprinkles; press toppings lightly to adhere to popcorn layer. Let stand for about 30 minutes or until set.

Cut into bars. Store in airtight container.
