Did you know that Zucchini is technically classified as a fruit? It is! However, it’s sold and grown as a summertime vegetable. Hence the alternative name of Summer Squash. We like using fresh zucchini in a variety of dishes like casseroles, sweet breads, cookies, cakes, creamed soups, stews, stir-fry, baked appetizers, muffins, etc.
Whether you grow them yourself or pick one up from the store…all zucchini need to be properly stored if you’re not using it right away. When I say right away…I mean within 8 hours. The best way to store them is laying flat in your refrigerator. Storing it in the refrigerator will help to keep it fresher, for a longer period of time. I’ve gotten them to last for a week!
