How many of you enjoy a good hardboiled egg sandwich from time to time? I know I do! However, they can get very boring and lack flavor. A few years ago I amped up my egg sandwich routine by using pickled eggs. Yes, you read that correctly, pickled eggs!
I admit…homemade pickled eggs are definitely better than store bought, but sometimes I’m having a busy week and will pick up a container from the deli at our local grocery store. You can use salad dressing or mayonnaise, whatever you prefer. I use an egg slicer to slice up the egg so I get uniformed slices. You can certainly use just a butter knife. Sprinkle on a little salt and ground black pepper…enjoy!
To keep things interesting I’ll sometimes slice up the pickled red beets and add those too! Red Beets are a healthy for you veggie…and this is a great way to incorporate them into your diet. My husband enjoys these sandwhiches but likes using a creamy salad dressing like Ranch drizzled across the top.

I =have never tried pickled eggs, but it does seem like good idea. I think that I would enjoy them with beets.
I have never had pickled eggs or even noticed them in the store, but I am sure I would like them since I like beets. I am going to try your homemade recipe. It looks fairly simple.
I have never ate beet or pickled eggs. My sister in law makes them all the time but just never wanted to try. This is a different sandwich
