My children enjoy snacking on breakfast cereals especially when those cereals are an ingredient used in cookies or snack mix recipes. Last weekend I picked up a box of Corn Flakes cereal at my local Dollar General Store (great prices on breakfast cereals) and we made this No Bake Corn Flakes Chocolate Cereal Snack Mix. You only need a few basic pantry ingredients to make it. It’s completely made on the stove-top.

Before we get to the recipe I want to introduce you to Selefina, the spice shop through Adagio Teas. For this recipe I used the Cacao Powder from Selefina. It comes in sample sizes, shaker jar, refill, and large refill sizes. I got the large 6 oz. resealable bag because I use a lot of Cacao Powder in various recipes. It’s a staple in my pantry. This is PREMIUM Cacao Powder and wow…you can tell the difference! It has a wonderful fine powdery consistency to it and the taste is fantastic!
No Bake Corn Flakes Chocolate Cereal Snack Mix
2 cups regular Corn Flakes breakfast cereal
1 cup granulated sugar
1/4 cup butter (not margarine)
1/4 cup milk
1/4 cup Selefina Cacao Powder
1/3 cup creamy peanut butter
1/2 teaspoon vanilla extract (not imitation vanilla)
1/4 teaspoon salt
In a large saucepan melt the butter over medium heat. Add in the milk, granulated sugar, cocoa powder, vanilla extract, and salt. Bring mixture to a rolling boil. Once boiling time the boil for exactly 1 minute, stirring constantly to prevent scorching. Remove pan from heat.
Stir in the creamy peanut butter until melted. Fold in the Corn Flakes breakfast cereal. Stir with a rubber spatula until cereal is completely coated in the chocolate mixture.
Lay out a sheet of aluminum foil or parchment paper. Spoon the mixture out onto the prepare sheet using a large spatula and smoothing it into a single layer (like shown in the photograph). I like to lay a second sheet of aluminum foil over the top. Let it cool down on the counter-top. As it cools it will harden up. Once cool you’ll break it apart into chunks and place into an airtight container.
I will pour it into a bowl or zipper close snack bags for my children. Obviously, the bowl for snacking on it at home and the baggies for when I’m packing it in their backpacks or while out on-the-go.
