Popcorn has come a long way. These days you can mix-in all kinds of other ingredients to give it a flavorful twist. It can be used as an ingredient in recipes, as a topping, or a mix-in for your favorite on-the-go snack mix. Today’s guest post recipe is courtesy of Popcorn.org. This recipe will make approximately 8 cups.
Coconut Crunch Chia Clusters Popcorn Snack Mix
8 cups unsalted, unbuttered popped popcorn
2/3 cup granulated sugar
1/3 cup butter
3 tablespoons honey
1/2 teaspoon salt
1 cup coconut flakes
3 tablespoons chia seeds
Preheat oven to 325° Fahrenheit. Line large, rimmed baking sheet with parchment paper. Place popcorn in large mixing bowl. In small saucepan set over medium heat, combine sugar, butter, honey and salt; bring to light boil, stirring often, until melted.
Pour sugar mixture over popcorn. Add coconut flakes and chia seeds; toss gently to combine. Spread mixture on prepared baking sheet. Bake for about 30 minutes or until popcorn is lightly toasted. Let cool completely; break into clusters for serving. Store in an airtight container.

I like to make different versions of popcorn snack mixes. This is another recipe to add to my repertoire.
Tasty combination of flavors. I like the addition of the coconut flakes and chia seeds. This would make it so much better than regular popcorn for a special treat.
